This has been a tough week for me. I have a good friend who is a lot of fun. She is someone with whom I have laughed at many an off-color joke, and shared meals with. We have gone to church together, been to each other's homes, and even work together. This week she did something that stunned me. She made a personal comment, not only to a coworker, but also to other people that I know outside our job. This personal comment was so hurtful and so degrading to me that it threw me back and stunned me. That is not easy to do. I like to think that I can roll with the punches, and at this stage in my life, not too much actually surprises me. But this sure did. In the wake I was left wondering why.<br />
<br />
It took another insightful person, more-or-less outside the situation, to point out that it was jealousy that was the driving force. Once I heard that, it all made sense. So, once again, I went back to my handy-dandy Bible to look it up. There are a large number of references about jealousy in there. And, a number of them refer to God himself. "I am a jealous God... you will have no other Gods before me...I am jealous for Jerusalem and Zion... jealousy burns like a fire." Something else that I noticed too, is that jealousy and anger seem to go hand in hand. I gotta tell ya, they sure do in my case. The anger that I have felt this week is beyond anything that I have felt in a long while. It was an extremely uncomfortable feeling. One that I do not like at all.<br />
<br />
But I also noticed that with jealousy and anger, also comes repentance and redemption. I think that it would take a force and a being much greater than myself to get us past where we are right now. I just happen to have that force in my life, and I lean on Him every day. His name is God. Tomorrow marks a very special week for our friendship, His and mine. Let's see where He takes me this week, and beyond. I still have lessons to learn, and things to experience in life. I'd like to thank Him for walking with me all of my life. I don't know what it feels like to live without You, and I don't even want to try. Thanks for being the friend that has never hurt me.<br />

Do you see who you really are, or who you want to be? Or who someone else wants you to be? Are we really honest with ourselves, and with others?<br />

"The Fixers" of the world want to see people who are broken inside, so they can fix them. "I just want to help" is a common defense. But who are they helping? Others, or themselves? <br />
<br />
Victims blame everyone. "If ____ hadn't happened, I would be a totally different person. I could be happy." They don't see who they are, or who they can become, only what has happened to them. They are stuck in the past, and therefore destined to repeat it. They re-live the same nightmares over and over again, as if once wasn't enough. What happened to them becomes who they are, and they try to drag you into their misery so they can have some company.<br />
<br />
Apathy is dangerous. People just don't care. The question is why? Does life really not matter to them? Or have they beaten their heads against the wall so many times, only to haved no one else truly hear them?<br />

I think listening is the key. People don't do this well anymore. We are all so busy, rushing from one place to another. "How are you?" we ask, running by without waiting for the answer. Can you remember the answer the last time you asked someone how they were? I can't.<br />
<br />
I know that life is extremely frustrating to me when my Fixers don't listen to me. I tell them that I am fine, and they tell me that I am not. I tell them that I am happy, and they say that I can't possibly be. The Victims in my life want to drag me down with them, but I won't let them. What I want to tell them all, is to look at me... <em>Really look at me</em>. See me for who and what I am, not what you want to see, or what you are projecting on to me. <em>Look at ME! Listen to ME! </em> I am me, not a projection of anybody else on earth. I strive to reflect Christ in my life, while still being the unique and inidividual me that God made. This is not easy sometimes. There are days when I just want to pull my hair out, but I persevere. God never promised happiness, just salvation. That is the most important promise I have ever been made, and I cling to it.<br />
<br />
For you, I wish a world full of life, love, and overwhelming happiness. I wish that you are surrounded by people who love and listen to you, and let be who and what you are inside, not what they want to make you. Spread your wings. Learn to fly. Soar to heights never before known to man, and show the world just who and what you are... not what they want you to be.<br />

It’s not the little plastic toys that we manage to screw up, but each other’s lives instead. Have you ever been in a position when you did not live up to someone else’s expectations? Had someone try to make you, change you, or downright force you into something that you don’t want to do, or be? Someone who tries to change you into the person they want you to be, and not who you want? My question is: What makes their expectation the right one? I have several of these people in my life. And when I try to talk to them about it, they all seem to revert to one answer. They are trying to <em>help me</em>. Help me do what? I have yet to figure this out. Most often what I have found is that the people who are trying to help me the most, are the ones who actually know me the least. These are not people who have my best interests at heart, though they may be absolutely convinced that they do.<br />
<br />
God created us to be who and what we are. We are each one unique to our own shape and purpose. We all have a reason for being here. It is God’s reason, not our own. <br />
<br />
If you try to live up to the expectations, wills, and demands of those around you, then you will never be able to live up to it all. There are far too many people out there. And in the process, you will fall short of what God’s plan is for your life. So, when someone tells you to ‘learn to think outside the box’, ask them whose box that is? Your box was custom made by God, just for you. You cannot fit into theirs, nor they into yours. I think I’m going to start telling them to ‘learn to start thinking inside of their own.”<br />

The study states:<br />

"The research, unveiled at a press conference Sept. 14, 2010, shows that the watercress compound is able to interfere with the function of a protein which plays a critical role in cancer development.<br />
As tumours develop they rapidly outgrow their existing blood supply so they send out signals which make surrounding normal tissues grow new blood vessels into the tumour which feed them oxygen and nutrients.<br />
<br />
The research, led by Professor Graham Packham of the University of Southampton, shows that the plant compound (called phenylethyl isothiocyanate) found in watercress can block this process, by interfering with and 'turning off' in the function of a protein called Hypoxia Inducible Factor (HIF)."<br />

Watercress contains fifteen essential vitamins and minerals. Watercress contains significant amounts of iron, calcium, folic acid and vitamins A, B1, B2, B3, B5, B6, B17, C, D, E and K. Watercress can act as a mild stimulant and promotes appetite. It is a source of phytochemicals and antioxidants. Watercress is a diuretic, an expectorant and digestive aid. Other therapeutic uses of watercress include relief from coughs, head colds, bronchial ailments, asthma, stress, pain, arthritis, stiff back and joints, diabetes, anemia, constipation and emphysema.<br />
Watercress is one of the best sources of element iodine which is important for the function of the thyroid gland. The leaves of watercress is used as a poultice and applied for relief from enlarged prostrate gland. Sulphur contained in watercress plays an important part in protein absorption, blood purifying, cell building and in healthy hair and skin.<br />
Watercress is known for its antiscorbutic qualities. The leaves bruised or the juice from watercress can free the face of blotches, spots and blemishes when applied as a lotion. A daily portion of watercress in cancer patients has the ability to reduce DNA to a significant level and to increase those cells to resist further DNA damage caused by free radicals. Watercress also has the ability to reduce in blood triglyceride levels by an average of 10%.<br />
Significant increase in blood levels of lutein and beta carotene which have antioxidant activity by 100% and 33% respectively can be seen by regular intake of watercress. These are associated with a lower incidence of eye diseases such as cataract and age related macular degeneration.<br />
<br />
So, it if turns out that watercress can help in fighting cancer, I say slap some honey mustard dressing on it and eat away. What could it hurt? Perhaps there is more wisdom in the universe than we realize after all.<br />

Not the rock that most women dream about, but a living, breathing diamond that you call a friend? A person that has been put under such intense pressure that they have actually changed into something that glitters and shines. They didn't shatter from the pressure, but grew into one of the hardest substances known to mankind - something that can cut glass and not be scathed. Something that is not marred by anything, but still shines through it all.<br />

I have several. One has become very prominent lately. The pressure? Cancer. For the second time cancer has struck this particular family, but instead of depression, fear, and giving up, I see my diamond shine. It is truly something to behold. I don't know that given the same pressure, and for the second time, that I would be able to stand up like she does. When going through my divoce, I used to tell people that it was a good day when my socks matched.<br />
<br />
We all know that God won't put us through more than we can handle. All we need to do is to lean on Him. I have told people in the past that I must not be able to handle very much because I haven't really been through much. I will reaffirm that now. I don't know that I could be a diamond the way my friend is. She shines with a light brighter than I think I ever could. But with friends like that, I have hope that when and if my day comes, that perhaps I can draw a strength from those true blessings in my life; my diamonds; my friends, to get me through it all, unscathed and glittering like both the sun... and the Son.<br />

To my diamonds. Faith, friendship, and a little chocolate is what makes the world go around. I love you guys.<br />

Tonight is my favorite show, Top Chef. Ever since the first show came on 7 years ago I have been absolutely addicted. Tonight's recipe is completely plagarized from that show, thanks to Marcel and Ellia.<br />
<br />
There isn't anything really magical or difficult. It is a simple tostada. You can put whatever you like on the top, beef, chicken, vegetarian, beans, rice, cheese, etc. What makes this one special is that it is on a sliced apple instead of a tortilla. Now before you start turning your nose up and thinking that the apple is "forbidden fruit", think about it. The apple is light, slightly sweet, and refreshing. It would make a good backdrop against the spiciness of the toppings. It is also low carb, for those of us who count that stuff. It sounds delicious.<br />
<br />
So, my homework will be to try this recipe and let you all know how it comes out. I have really tried to let go of the old things, the law, if you will, and embrace a new freedom where food is concerned. There is no forbidden fruit since I have been set free, made whole, etc. You get the idea. God loves me, so apples on my tostadas are a good thing.<br />

That is no small feat these days. The economy sucks. The job market is tight, and time is a precious commodity. There never seems to be enough hours to go around. I did manage to make it through the Christmas season without gaining too much weight, though (a minor miracle if you ask me). Actually the diet, (uch! I hate that word) has been on hold since Halloween. I decided that I needed a little vacation from rules. I may need to adopt this every year. It has done amazing things for my attitude. But now it is time to come back home, like the prodigal son.<br />
<br />
It should be no great surprise to anyone that I indulged in a number of sweet treats over the last two months. Actually I only crave sweets a couple of times a year. Around Easter, and beginning at Halloween. I think I would be fine if they were not sitting right under my nose at every turn. The fact is I do have a sweet tooth, but with the diabetes that runs in my family, along with the weight problems, it is just not safe to eat that much sugar. This year, I found a new recipe for sweets that I absolutely adore. I want to share it with you:<br />

Peach Cobbler:<br />
<br />
6 fresh Peaches, stones removed and sliced into quarters<br />
¼ C honey<br />
½ tsp. vanilla <br />
1 egg white<br />
½ C rolled oats<br />
Pine nuts<br />
1/4 C brown sugar<br />
<br />
Quarter the peaches and lay skin side down in a baking dish. Mix the honey and vanilla together. Drizzle over the peaches.<br />
<br />
In a separate bowl, whisk the egg whites for about a minute until smooth. Mix in the oats and pine nuts and stir well. (If mix is still moist, add more oats until a crumbly consistence. Spread the mixture over the peaches, and finish with sprinkled brown sugar over the top. Bake in a 350 degree oven for about 30 minutes, or until the peaches are soft and the topping is golden brown. Let cool.<br />
<br />
This dessert is delicious as it is, or can be topped with fat free ice cream, yogurt, or whipped cream. It is low in calories, and fat free, and above all, delicious. You can also use, pears, apples, apricots, plums, or any other fresh fruit that you like.<br />

Happy Sunday everyone! It is November 7th, and it is cold and rainy outside; the kind of day when a hot steamy bowl of soup would really hit the spot. Actually for lunch I had canned tomato soup and a grilled cheese sandwich. It was very mediocre.<br />

With the celebration of Advent right around the corner, and the traditional soup suppers at church, my mouth began watering for a great bowl of soup. Not something out of a can, but something homemade, filling and delicious. <br />
<br />
My favorite, like the rest of the world, is the all time popular Chicken Noodle soup. With my recent discovery that my body doesn’t tolerate carbohydrates well, I will have to settle for my second favorite: Chicken Vegetable. It is quick, easy, and cheap. What’s better than all that?<br />
<br />
Take a whole chicken, rinse and remove the giblet package (discard this, EWWW!). Toss it in a crock pot, fill halfway with water, salt and pepper lightly, and cook on low for 4-6 hours. Remove the chicken reserving the liquid in the crock pot. Take the meat off the bones and return to the crock pot. Chop your favorite vegetables into uniform, bite size pieces and add to the crock pot. You could even throw a package of frozen veggies in there if you are pressed for time. I like to use:<br />

Carrots<br />
<br />
Celery<br />
<br />
Onions<br />
<br />
Garlic<br />
<br />
Corn<br />
<br />
Zucchini<br />
<br />
And potatoes<br />
<br />
You could also add noodles, or rice, if you wish.<br />

Cook on high for another 1-2 hours. Serve. Eat.<br />
<br />
What is simpler? The house smells great. It is nutritious. It is cheap. You only use 1 pot, so clean up is a breeze. It can also cook itself while you are out running errands or at work. It’s hot and it’s perfect. It is also an easy meal to share with a large crowd. At my church, we have soup suppers on Wednesday evenings. This travels well, reheats in a snap, and satisfies a large, hungry crowd. Serve with buttered bread, or crackers (if you are not carb intolerant). Celery sticks with cream cheese, or grilled zucchini slices topped with parmesan cheese make a good side as well.<br />

So I took my annual trek to Apple Hill, California this week with my parents. I love Apple Hill. The weather is beautiful, and the scenery beyond description. We walked among the orchards and saw all of the fruit still ripening on the branches. The smell of fresh fruit, warm in the sun is a beauty to behold. I have decided that when I am rich and famous, I am going to buy an orchard and live up there among the fruit trees.<br />
<br />
We saw the crafters, smelled the fresh baked pies, saw the presses squeezing the juice for cider, and then my favorite… the Fudge Factory.<br />
<br />
Now for those of you who know me, I have been on a strict diet for quite some time now. I have lost 35 pounds, and it should come as no surprise sugar has been off limits for me for the better part of this year. Walking into the Fudge Factory I went onto sensory overload. I didn’t behave shamefully though, after all, my parents were with me. I did, however, walk straight to the corner with the caramel apples and took my place in line. I have two favorites, and with a little shameless flirting, I was able to extract the recipes for Cheesecake Caramel Apples, and Turtle Carmel Apples.<br />

Cheesecake Carmel Apples<br />
<br />
Follow your favorite recipe for a standard caramel apple (usually apples dipped in the little melted caramel squares that you buy at Halloween time). Let sit on a tray, sticks up, and let the caramel set. Then as a second layer, dip the apple (over the top of the caramel) in a mixture of half white chocolate and half cream cheese, slowly melted over a double boiler. After dipping, roll the still wet chocolate in some graham cracker crumbs and return to the tray to set. It is DELICIOUS!!!<br />

Turtle Carmel Apples<br />
<br />
For the Turtles follow the same recipe for the first step (dipping the apple in caramel and allowing it to set). For the second layer, dip the apple in a mixture of half white chocolate (or dark chocolate if you prefer) and half peanut butter. Roll in your choice of chocolate chips, cookie crumbs, or any assorted candies.<br />
<br />
Refrigerate to set firm and enjoy. I gave myself this treat after such a long time of being diligent on my diet. It was my reward for a job well done, with no serious after effects either.<br />

I have tried sssooo many diets sometimes my head spins. Low calorie diets, the hot dog and boiled egg diet, the belly fat diet… you name it and I have tried it.<br />
<br />
So, I finally found a diet that works – or so I thought. I tried one of the popular no-carb, low-carb options, and lost 33 pounds. I was so very proud of myself. When I went to the doctor I bragged about it, until my blood work came back. Seems I lost 33 pounds, and gained 40 points on my bad cholesterol! How could this happen? I was eating healthier than I have in years, and the scale proves it. I cried. Then I called the doctor and cried again. “Now Lori,” she said, “it could be genetic.” Even that didn’t comfort me much. My cholesterol is still high, and I now have to change my diet, yet again, from something that works to something unknown. I am Lutheran. We don’t like the unknown. We tell God that all the time. <br />
<br />
Low fat was recommended. After a consultation with a dietician, I was armed with the information that I needed to cut the fat from my diet. So, being a bookkeeper, I did the only thing that I know how to do – I made a spreadsheet. I have columns for carbohydrates (out of habit), calories, fat, and one to automatically calculate the percentage of fat from calories, then subtract my exercise for the day, leaving me with a net calorie total at the end of the day. Once I set it up, I never have to think about it again. I also made macros for the food counts of my favorite foods. Now all I have to do is enter things like:<br />

1 tomato<br />
<br />
½ chicken breast<br />
<br />
2 tsp ketchup, etc.<br />
<br />
and the spreadsheet does the rest. I’m still not happy about it, but am willing to give it a try for my health.<br />
<br />
Now I know my body is a temple, and that we are to avoid things that will hurt us (I now put blood tests in this category). I wonder what Biblical times people did to lose weight. The federal government says that low fat is the best. What does the Bible say. Then I found it:<br />

Genesis 4:4 <br />

‘But Abel brought the fat portions from some of the firstborn of his flock. The Lord looked with favor on Abel and his offering.”<br />
<br />
We are supposed to give the fat to God, and He is happy. This is mentioned multiple times in the old testament. We are not to eat the fat, but save it for our offerings. Could it be that the federal government is right, and that fat free is the best way to go? I don’t know if I will go that far, but I am willing to try it and see what works. <br />

I hate diets. They never work. I am told that your metabolism will eventually catch up to anything that you are doing. So, a new diet will work for a short while, then your body adjusts and it stops working. There’s even a fancy term for it... they call it Plateauing. Personally, I call it stubbornness. My body revolts against anything that it doesn’t want to do. When you tell me I can’t have something, that’s the only thing that I want. At that point my whole world turns OCD.<br />
<br />
We all know that too much of anything is bad for you, especially in the red meat genre. One main problem that I have is portion control, and a love for beef. I do love vegetables, though. I have often joked that I could be really happy being a vegetarian. Although not a traditional vegetarian. I am not at all satisfied with a plate of steamed vegetables and a no-dressing green salad. From my childhood I have carried a love for soups, gravies, and sauces. I need texture too; crunch, spice, and above all good flavor. <br />
<br />
So, I have formulated a new plan. I call it Hybrid Veg-a-holism. Defined by me as generous portions of my beloved vegetables, flavored with limited amounts of broth, and healthy meat products. I will eat vegetarian several days a week to start, then if all goes well, perhaps increase. I need to take it slow and see what works for my body and lifestyle. <br />
<br />
Now I don’t really know that much about it, but I do know there are degrees of vegetarians. I could never make it all the way up to Vegan ( no animal products of any kind). But there are Veg-a-holics that only eat chicken and fish. They also eat cheese and eggs. That’s where I am going to start. I am also not going to give myself any hard and fast rules that I will immediately be tempted to break. So, if I occasionally (and I do mean occasionally) want a fat juicy burger, then I can have one. But, as a general rule, for my eating habits at home, I plan on going healthy hybrid.<br />
<br />
Here is my own version of a recipe that I got from a fellow blogger who calls herself the Skinny Chef ( 2010). She recently posted an idea for Lentil Tacos. Here is my own take on it.<br />
<br />
Take 1 8 oz. can of chicken broth, combine with 4 oz. water, and 8 oz. of dried lentils. Boil until lentils are tender and most of the liquid is absorbed (approx. 30 minutes). Add 1 tablespoon of minced garlic (remember lentils take a lot of spice) and 1 small finely diced onion. Cook until tender. Add 1 package of prepared taco seasonings, or your own taco spices to taste. Adjust the amount of liquid if necessary. Once the lentils are soft enough and the seasonings are right, use this as a replacement meat mixture, and prepare tacos as normal. I like the crunchy taco shells that you can buy at the store. I put shredded cheese, refried beans, sour cream, lettuce and tomatoes on mine. Top with hot sauce, and enjoy. When I ate them I was so satisfied with the familiar flavor of the spices and the traditional crunch of the taco shell, I didn’t even miss the meat. My daughter (another original carnivore) loved them too. We decided that this definitely was a meal worth doing again. Another idea is to take the spicy lentil mixture and make lentil tamales with it (recipe to come in another blog posting).<br />
<br />
If I can get enough good tasting meals that will satisfy me, then this whole hybrid healthy eating thing might just work. Just don’t tell me that ‘I can’t’ have something. It’s all over at that point.<br />
<br />
Help me get through this, please. Send me your ideas for your favorite meals that could easily be converted. I will try them all and post the results, good, bad, and ugly. In the meantime, try the lentil tacos and let me know what you think. I would love some feedback.<br />

February 23 is the IHOP-declared national pancake day. They gave away free pancakes to anyone who was willing to stand in line (in the rain here in California) from 7:00 to 10:00 am. I watched on the morning show as hundreds of people showed up. It reminded me of what a wonderful breakfast pancakes are. They are quick, easy, and delicious. Blueberry is my favorite. Here’s my best recipe:<br />

<strong>Blue Berry Cloud Pancakes</strong><br />
<br />
2 cups all-purpose flour <br />
<br />
1/4 cup sugar <br />
<br />
2 1/4 teaspoons baking powder <br />
<br />
1/2 teaspoon baking soda <br />
<br />
1/4 teaspoon salt <br />
<br />
2 eggs, separated<br />
<br />
2 cups buttermilk <br />
<br />
1/4 cup melted butter <br />
<br />
1 cup blueberries, fresh or frozen <br />
<br />
<strong>Topping:</strong><br />
<br />
8 oz. Cream cheese, softened<br />
<br />
½ tsp. vanilla<br />
<br />
3 - 4 tbs. sugar<br />
<br />
<strong>Directions:</strong><br />
<br />
In a large bowl sift together the flour, sugar, baking powder, baking soda, and salt. <br />
<br />
Beat the egg yolks with the buttermilk and melted butter. Combine the dry and the wet ingredients into a lumpy batter, being careful not to over mix.<br />
<br />
In a separate bowl, beat the egg whites until they form soft peaks. Gently fold this into the pancake batter. (If you wish, you can skip this step and include the whole egg above).<br />
<br />
Heat some butter in a skillet over medium heat. Spoon 1/3 cup of batter into the skillet and sprinkle the top with some of the blueberries (If you stir the blueberries into the batter they will break up). Cook for 2 to 3 minutes on each side, until golden brown and fluffy. Small bubbles should break on the top of the pancake when it is time to flip.<br />
<br />
<strong>Topping:</strong><br />
<br />
Beat together until blended softened cream cheese, vanilla, and sugar. Top each pancake with a dollop of this delicious mixture and a few more blueberries.<br />
<br />
Remember; Don’t over mix the batter, or it will result in flat, heavy pancakes. <br />
<br />

For you on Valentine’s Day, I have a bouquet of flours. When I began my cooking journey I had no idea that there were so many different kinds of flour. Oh sure, I could read the bags. All Purpose flour I pretty much figured out. You could use it for anything. Cake flour I didn’t buy since my cakes all came in their own boxes with nice pictures on the front. Bread flour I started buying when I got my first bread machine, and whole wheat stayed right there on the shelf at the store. If it was too heavy to carry then it was too heavy to eat. I have rules.<br />
<br />
But I have learned that it goes way beyond that too. I have started listening to cooking podcasts and learned a lot more about my flours. Did you know that even among the common types of flour that you can buy in the grocery store, they differ from one part of the country to the other? For instance, flour in the south contains more starch than anywhere else. Also flours in the north east have more protein. I don’t know what my flour in California is compared to the rest of the states, but I figure this may be why I can follow a recipe EXACTLY and still have it come out different than Paula Deen’s does. She has more starch!<br />
<br />
I also learned that a lot has to do with the way that flours are measured too. If you scoop your measuring cup into the bag and then level it off, you can end up with about 5 ounces of flour. However, if you gently scoop it out with a spoon and put it into your cup, then level it off, you will end up with more like 3.5 ounces. That’s a big difference when you are making a batch of cookies. My boss has an old recipe for biscuits that has been passed down in her family for several generations. In it, it calls for 3-4 handfuls of flour. We compared hands one day. Hers are very tiny, petite hands, and mine, well, are not. So how much flour is that? I guess the pioneers had to learn that one too. I previously stated that my ex- made better cookies than I did. He is a scooper and I am a spooner. So no matter how much extra flour I put in, it still wasn’t as much as the extra he was putting it. Now it all makes sense. It wasn’t me. It was the flour!<br />

So apparently you can teach an old dog new tricks! And, as much as I hate referring to myself as an old dog, I have to say thank you to all my readers. I asked for some help finding a great cookie recipe, and all I can say is WOW! Not only did you come through with some great recipes, but I also got an entire list of things that go along with it. First I have to say that the Nestle’s Tollhouse cookie recipe was the most highly recommended. Above that, there were some oatmeal recipes, peanut butter, and I am still waiting for my niece to send me her “out of this world lemon squares” as soon as she is done with her homework. I plan on trying each and every one of them, but one thing that I learned is that it is not all about the recipe.<br />
<br />
I got some good tips as far as the recipes go. Almost everyone agrees that you need to double the vanilla - always. One person said to use half again as much almond flavoring too. That one sounded good. We seemed to be equally split on the real butter vs. margarine people. And, the most interesting tip was to add an envelope of instant pudding mix to the dry ingredients. Several people came up with this. They also even suggested using different flavors to change the flavor of the cookies. I am definitely trying that one. <br />
<br />
Moreover, I also need to:<br />
<br />
Bake them for the minimum amount of time (I am good at doing the minimum amount required);<br />
<br />
never leave the kitchen, they must be watched closely like children; (my children are grown, I’m beyond this now. This could be part of the problem.);<br />
<br />
use air pillow pans (pillows make me sleepy. I could be in danger of a spontaneous nap);<br />
<br />
use only salted butter (there goes my blood pressure);<br />
<br />
use only dark brown sugar;<br />
<br />
bake them on parchment paper (paper and fire - not a good idea to me);<br />
<br />
use only wax paper to cool them - no racks (what’s a rack?);<br />
<br />
take out a minute early, but leave on the hot pan to carryover cook for the last minute;<br />
<br />
practice makes perfect, try them over and over again (this should add a good 20 pounds);<br />
<br />
buy an oven thermometer; (here’s an idea.)<br />
<br />
clean your oven (I gotta tell ya, this one really sucks);<br />
<br />
rotate my trays (I’ll leave that one alone);<br />
<br />
melt the butter first (hmmm);<br />
<br />
use half butter/half shortening (which half?);<br />
<br />
cookies should be placed on either brown paper bags or paper towel after removal from the oven <br />
<br />
refrigerate the dough before baking (first I’m melting, now I’m cooling. I’m feeling little schizophrenic);<br />
<br />
make bar cookies, they’re easier (you read my mind);<br />
<br />
add an extra 1/4 - ½ C flour to the recipe (my ex- always did that, but I think it was a lot more than that. He’s an over-achiever.);<br />
<br />
use only fresh baking soda (this should probably go for all ingredients);<br />
<br />
bake at 300 degrees for longer (straight from the Mrs. Fields recipe book);<br />
<br />
remove from the pans right away (contradiction from another reader, not sure which way to go here);<br />
<br />
bring the eggs down to room temperature (and pray they don’t hatch);<br />
<br />
cream ingredients by hand (probably get carpal tunnel now);<br />
<br />
always sift the flour (don’t have a sifter thing either, can you get them at the same place as a thermometer?);<br />
<br />
use a scoop instead of a spoon for uniformity (I say individuality is refreshing);<br />
<br />
watch the timer, critical;<br />
<br />
Ask Alton on that Food TV-thingy (I do but he never answers me);<br />
<br />
And, last but not least: Have Fun.<br />
<br />
Two things I learned here. One, baking is kind of a science. All of the ingredients have to work together like an experiment. If you mess with part of it (like temperature, etc.) then the cookies won’t work. And second:<br />

Have fun. Who cares if they aren’t perfect? I don’t. God certainly doesn’t. He knows me too well by now. I will never be perfect, and am so very grateful that I am not expected to be. That would end badly. More than one person suggested buying some cookies, putting them on a plate and pretending like I had made them. That has definitely been my style up until now. In today’s harried world, that is the preferred cookie acquisition method of my home. But I think I’d really like to learn this. My own daughter even showed me up two days ago with some amazing double chocolate (white and milk chocolate) chip cookies. Thanks, Kelly. And what confuses me more about the whole thing is that he puts twice as much flour into the recipe as it calls for, then bakes it for less time. It’s not like they come out raw, either, dough is always moist. These cookies are soft and moist, and completely cooked. They don’t deflate into a flat disc of uncooked dough when he takes them out of the oven. They are still cookie shaped when they are cool, and still good to eat the next day. I don’t know how he does it.<br />
I’ve tried and tried but can’t figure out what the problem is. Well at least part of the problem anyway. I made some chocolate chip cookies one day. I didn’t hear the timer and they stayed for an extra minute or so... or so... or so. They were a little brown on the bottom... ok, black. I didn’t want to throw them away because it is wasteful to throw away food. “Think about all the starving kids in Peoria”, I could hear my mother say. So, I gave them to our dog, Lucy. She growled at me. Me! Talk about biting the hand that feeds you. This is a dog that would eat raw onions and dill pickles off the floor if you dropped them. That was it. That day I decided to go on a mission to find the best cookie recipe in the world. I have looked far and wide for the perfect cookie, and this is what I have found. Nothing... nada... zip. I am convinced that not a single cookie recipe exists that I am capable of making perfectly.<br />

So now it is time to call in some troops. I need some recipes. I need something that can be done on a budget, (not costing $100.00 a cookie). I need something that can be done in a few minutes, and something that is tasty. Above all, I need something that I can actually do. I have invested in a new kitchen timer, so we are ready on that front. So, I am asking all of my faithful readers to send me their favorite cookie recipes in the hopes that I can learn to make the world’s best cookie.<br />

I have done it! I have discovered the quickest easiest meal on the planet. It literally didn’t take me any time at all. And, above all it was amazing, low calorie, and tasted wonderful. The secret? Let me tell you another story first. <br />
<br />
Yesterday my son came to my office to drop something off. I told him that I was having a stressful day and would probably be working late... something that I have been doing more frequently lately. I asked him to take something out of the freezer for dinner. At that exact moment I really didn’t care what it was. I could have poured ketchup on cardboard and it would have been great. He said he would, and then took off for home. He called a couple of hours later to tell me that he had chicken ready. Boy did he...<br />
<br />
When I got home he had made a delicious meal of Ham and Chicken Pesto rolls, with salad and bread. You see, he has been doing his paramedic internship through the Sacramento City Fire District, and on his long 24-48 hour shifts, during the down time they taught him how to cook. I knew there was a reason everyone loves a fireman! <br />
<br />
Here’s what he did:<br />
<br />
Take boneless, skinless chicken breasts and butterfly them so they lay flat. On one side, spread a thin layer of pesto sauce. You can buy this pre-made in the store, or make your own. Lay thin slices of ham and thinly sliced tomatoes on the same side, then fold the chicken back over to cover the goodies inside. Top with shredded mozarella cheese, and sprinkle the top with seasoned Italian bread crumbs. Bake in a 350 to 375 degree oven for about 30 to 40 minutes until golden brown on top and bubbly inside. <br />
<br />
Serve with green salad and fresh, hot french bread. It is a meal to die for. So, my secret for a quick, easy, wonder, amazing meal? Let someone else cook it for you.<br />
<br />
Think about it. If all of the big people in your house took turns cooking, that would take the pressure off us mom-types. Also, get the little ones involved early. Start teaching them as soon as they show an interest and are able to maneuver safely around the kitchen when there are both hot and sharp things going. If you have three people in your household, then each person would only cook approximately twice a week. That is a schedule anyone can live with. And, the rule when I was growing up was if you cooked, then you didn’t have to do the dishes. That seems fair here too.<br />

And, after a long day on my feet, to come home to that prepared meal was pure heaven. So thanks to my son for being the thoughtful, amazing man he has grown into. AND, KUDOS TO THE SACRAMENTO FIREFIGHTERS! Anyone free for a date? You can cook! <br />

Diet (di -at) offensive n. - to Die In Eternal Torment; the act of deprivation and loss of the senses resulting in depression, anxiety, extreme hunger pangs, loss of energy, mental focus, and all other sensory perception.<br />

This is how most people eventually feel when they go on the dreaded diet. The word alone evokes such emotion and resistance, that many cannot even bear to utter the word, relegating it to the list of foul and offensive four letter words that are never uttered in public by decent folk. But it doesn’t have to be that way.<br />
<br />
Deprivation In Eating Things does not have to be our definition for this very common life problem. Being overweight may not necessarily be your fault. There is some new medical research that suggests certain cases of obesity are to some degree caused by either a gene or hormonal imbalance, however there is nothing conclusive yet. Certainly some medical causes are proven such as blood sugar imbalance, diabetes, and thyroid conditions. Other cases are either behavioral or environmental. The one thing is certain, we all have to live with the effects, no matter the cause.<br />
<br />
Being overweight is every bit a national health problem as smoking or drug abuse. The healthcare dollars that are spent each year to treat obesity related problems are staggering. We all know that carrying around extra weight is unhealthy, but what can we do?<br />
<br />
First, learn to keep positive. Any lifestyle change will require an open mind and an open heart. Attitude is the key to everything in life. Over and over again in the Bible we are advised to “be of good cheer.” Most problems are easier to overcome with a good attitude and healthy frame of mind.<br />
<br />
Second, be prepared. Losing weight is not easy. It will require both time and effort. We need to make time to read and learn, to prepare healthy foods, shop and to read labels, understand what we are eating, menu planning, and exercising, just to name a few things. But, in the long run will it be worth it?<br />
<br />
Yes. Anything worth having is worth working for. Our health is worth it. If we are worth dying for, then we are worth living for. And, as you begin to exercise and shed some of those unwanted pounds, an amazing thing will happen. You will feel better, sleep better, have more energy, be less fatigued, be able to see and think more clearly, and see the world in a whole new light. It will seem as though there are extra hours in the day as you are able to see and do more. How many times have we all prayed for more time? Well, this could possibly be your answer.<br />
<br />
Two things I have learned in my life: 1. There is nothing so small that God does not want to hear it. If it is important to you, it is important to Him, and 2. Give God the problems, not the solutions. If we give Him all of the answers telling Him how to fix our problems, we remove from the solution the miracles that He may have in store for us. Tell Him what’s on your heart and let Him take care of the rest. <br />
<br />
I no longer diet. In my life DIET now means Divine Intervention Equals Triumph. Join me on my journey of weight loss and healthy living. Let’s do this D-word together, you, me, and God, and see where this road called life leads us.<br />

One of my favorite recipes for sweets comes from Michael Chiarrello of the Food Network. This is an adaptation of his Chocolate-Orange Brown Butter Popcorn.<br />
<br />
Chocolate/Orange Popcorn <br />
<br />
3 Cups fresh, hot popped popcorn<br />
1 oz. Bittersweet chocolate<br />
zest from one orange<br />
salt<br />
<br />
When the popcorn is still hot (preferably from an air popper) shave the chocolate over the top, allowing it to cover the entire bowl. The heat from the popcorn should melt the chocolate. Stir the bowl slightly to cover all popcorn completely. (If the chocolate does not begin to melt and stick to the popcorn, place it in a 350 degree oven for several minutes - just enough to soften the chocolate and make it stick.) Sprinkle the orange zest over the top and lightly salt. <br />
<br />
This is a delicious, light snack that will satisfy your craving for a sweet dessert without blowing your D-word.<br />

When I was a kid my grandmother used to make turkey soup. All of us grandkids would always make fun of her when she did. We thought it was the most disgusting thing to boil the carcass of the poor creature that had given its life for our holiday meal. It seemed somehow gruesome to me. On top of that, after eating turkey for 3 or 4 days, then to stretch out the same meal for another 2 or 3 days was more turkey than I could take. My father explained to me that my grandparents had lived through the depression so never threw anything away, EVER. This was a woman who would wash plastic silverware to use again, and rinse out paper towels to reuse.<br />
<br />
Now that I am older I realize that most of the flavor from any protein comes from the roasted bones. Once the turkey has been roasted, the real flavor can be extracted from the pieces that most people throw away. Take the entire carcass, skin, bones, scrapings from the bottom of the pan, etc., and throw it all into a huge pot. Add 1 tsp. salt. Cover with water and simmer on low for 2-3 hours, keeping a close eye on the pot to make sure that the water doesn't completely boil out. After the pot has reduced by 25-30%, taste the broth. When it tastes like turkey, remove from the heat and strain through a fine strainer. (Turkey soup can have many small bones and pieces, especially from the neck and backbone. Make sure to get them all so no one will choke later). You now have the base of your soup. To this you can add anything you like:<br />

Onions<br />
mushrooms<br />
celery<br />
carrots<br />
corn<br />
beans<br />
peas<br />
potatoes<br />
rice<br />
noodles<br />
leftover turkey meat<br />
chicken meat<br />
<br />
Add your desired ingredients, in your desired amounts and simmer for another 15 minutes to cook through. <br />
Make your soup any way that you like. I throw the leftover gravy into mine too. I also like mine a little thicker. Leftover mashed potatoes can do the trick here too. I like my soup pretty thick. Rachael Ray calls it stoup - a cross between stew and soup.<br />

Experiment. Have fun. But above all, don't throw anything away. Someone from the Great Depression might get mad! Thanks Grandma.<br />

I hate traditional fruitcake. In fact, I wouldn’t even call that stuff with the petrified fruit in it cake at all. That is a huge stretch even by my imagination. I have a fruitcake recipe that has been handed down through the generations in my family. I have made a few modifications to it, and have settled on a recipe that I enjoy all year long. So here, as my Christmas gift to you all, is The Best Fruitcake Recipe in the World.<br />
<br />
(We always called it Boiled Cake)<br />
<br />
2 C raisins<br />
1 chopped apple<br />
2 C sugar<br />
3/4 C shortening<br />
2 C water<br />
dash salt<br />
<br />
Combine above ingredients and boil for 2 minutes. Add:<br />
<br />
1 ½ tsp. each of Cinnamon, Allspice, and Nutmeg. Remove from heat and add 1 tsp baking soda. Stir well. Allow to cool.<br />
<br />
When mixture has completely cooled, add enough flour to make a medium batter (approx. 2 C)<br />
Add 2 beaten eggs, 1 C nuts, and any of the following you desire:<br />
<br />
1 can chopped pineapple<br />
1 large can Maraschino cherries<br />
chopped dried apricots, figs, or dates <br />
any other fresh or dried fruit you desire (I stay away from the candied stuff. It hurts my teeth and my tastebuds).<br />
<br />
Bake in a greased and floured pan at 350 degrees. Loaf pans for 45 minutes, and angel food pans for 1 hr. 15 min. Allow to cool, slice and serve warm with butter, or as is.<br />

1 tsp nutmeg<br />
1/2 tsp ginger<br />
1 1/2 Cups milk<br />
2 1/2 Cups pumpkin (1 large can)<br />
6 slightly beaten egg yolks<br />
6 egg whites<br />
2/3 Cup sugar<br />
1 1/2 Cups brown sugar<br />

Mix in saucepan brown sugar, gelatin, salt, spices, egg yolks, and milk. Cook over medium high heat until boiling, stirring constantly. Remove and stir in pumpkin. Chill (in bowl) until lukewarm. Beat egg whites until fluffy. Add sugar and beat until combined. Fold together with pumpkin mixture. Put into pre-baked pie crusts and refrigerate overnight.<br />

Makes 2 Pies. Serve with whipped cream.<br />
